Ingredients

  • 8 oz.

    sourdough bread, torn into bite-size pieces

  • 1/4 c.

    olive oil

  • 1/4 tsp.

    cayenne pepper

  • Kosher salt and freshly ground black pepper

  • 1

    garlic clove, grated

  • 2

    anchovy fillets

  • 1/2 c.

    mayonnaise

  • 2 tbsp.

    fresh lemon juice

  • 1 tsp.

    Worcestershire sauce

  • 1 tsp.

    Dijon mustard

  • 1 oz.

    Parmesan, finely grated (about 1/4 cup)

  • 1

    head romaine lettuce, torn into bite-size pieces

  • 1

    (5-ounce) cans tuna in olive oil, drained

Directions

  1. Preheat oven to 450ºF. Toss together bread, oil, and cayenne pepper on a rimmed baking sheet. Season with salt and black pepper. Bake, tossing once, until golden brown and crunchy, 13 to 15 minutes. Cool to room temperature.

  2. Meanwhile, place garlic and anchovies in a large bowl. Use a fork to mash the garlic and anchovies until a thick paste forms. Add the mayonnaise, lemon juice, Worcestershire, mustard, and Parmesan and stir to combine. Season with salt and pepper. Add the romaine and croutons and toss to combine. Top with tuna.
