Ayesha Curry's Spicy-Sweet Sambal Cod

This recipe, from Ayesha Curry’s new cookbook, The Full Plate, pairs affordable, heart-healthy cod with a zippy spicy-sweet sauce. Even better, it’s a quick, easy one-pan dish for your suppertime lineup. Flaky, mild-flavored cod is a good source of omega-3 fatty acids, which may help lower harmful triglycerides, reduce blood pressure and decrease risk of stroke and heart failure.

“Sambal oelek, an Indonesian chile paste seasoned with vinegar and salt, is a kitchen MVP," says Curry. "It can be used as a condiment, or blended with honey and rice wine vinegar for a flavorful glaze to slather on cod, which benefits from the pick-me-up.” Look for sambal oelek with Asian condiments at the supermarket. Sriracha or harissa also are good substitutes.

Ayesha Curry's Spicy-Sweet Sambal Cod Recipe

Ingredients

  • ¼ cup honey

  • 2 tsp light soy sauce

  • 1 tsp rice wine vinegar

  • 1 tsp sambal oelek

  • 1 tsp cornstarch

  • 2 Tbsp canola oil

  • 4 (5- to 6-oz) cod fillets

  • kosher salt and freshly ground black pepper, to taste

  • thinly sliced green onions, for garnish (optional)

  • lime wedges, for serving

  1. In a small saucepan over low heat, combine first 4 ingredients. Cook, stirring until honey has melted and mixture is fluid. Whisk in cornstarch; keep warm over low heat.

  2. In a medium skillet over medium-high, heat oil. Season fish on both sides with salt and pepper. Add to pan. Cook 2 minutes per side or until fish is opaque and flakes easily when poked with the tip of a paring knife. Drizzle sauce over fish. Garnish with onions, if desired. Serve with lime wedges.
