While their skin is extremely nutritious and can be consumed, it does have a bitter taste, and most people choose to peel it off before cooking them. These veggies shine no matter how you cook them—roasted, steamed, boiled, grilled or stewed. They're also wonderful left raw and make for a great salad ingredient option.
