Oriental tuna tartare with black sesame

Ingredients

  • 400g sashimi grade tuna

  • 2 Tbsp black sesame seeds

  • 2 Tbsp extra light olive oil

  • 2 limes, zested and juiced

  • ½ bunch coriander, roots and stems

  • 2 spring onions (shallots)

  • 2 avocadoes, not too ripe

  • 1 Tbsp sesame oil

  • 1.5 Tbsp soy sauce

  • 1 Tbsp fish sauce

Method

Place tuna in the freezer to firm up for a few hours. Once fairly frozen, use a very sharp knife to cut into 0.5cm cubes. Place in the fridge and allow to defrost.

For the sauce, toast the black sesame seeds in a pan with oil until fragrant, being careful not to burn them (especially as you won’t see a colour change). Remove from heat and allow to cool.

Finely zest the lime. Place zested lime in microwave and heat for 30 seconds. Remove, cool, and squeeze out the juice.

Finely chop coriander, roots, stems and all. Finely chop spring onion. Peel and dice avocado into 0.5cm cubes.

In a bowl, gently mix sesame seed/oil, lime zest, lime juice, coriander, spring onion, avocado, sesame oil
