Apple and cinnamon porridge

Apple and cinnamon porridge – which tastes just like apple strudel – only it’s healthy ! Make up a big batch of LSA (recipe below) as this is your porridge base and store in the fridge for maximum freshness.

Apple is high in pectin fibre that helps keep you fuller for longer as well as a mineral called boron that helps strengthen your bones and keep you alert. LSA can help reduce cholesterol and fight diabetes by lowering blood sugar levels because of its high fibre and high omega 3 content. A touch of cinnamon can help stabilize blood sugar levels.

Serves 1
Time it takes: 3 minutes

Ingredients
1 cup almond milk
1 green apple (cut into quarters with the skin included)
2 – 3 tablespoons LSA (see recipe below)
pinch cinnamon
Fresh fruit to serve

Method
Combine the almond milk and apple into your blender or Vitamix container and secure the lid. Turn machine on and quickly increase speed to high.

Blend for 30 seconds then pour the combined mix into a small pot along with the LSA and cinnamon.

Cook porridge over a low heat for a few minutes until heated through and thickened.

Serve topped with fresh fruit like blueberries, banana flaked almonds and extra almond milk and a little honey.

TIP: Replace almond milk with your choice of milk (skim, soy, rice)

3 cups raw Linseeds/Flaxseeds
2 cups raw Sunflower Seeds
1 cup raw Almonds
Place ingredients into your blender and grind on high speed into a fine meal.
