Terbiye is a traditional Turkish sauce used to thicken and add flavor to soups and stews. It's typically made from a mixture of yogurt, egg yolk, lemon juice, and flour, which gives dishes a creamy texture and a tangy, rich taste. Meliz shows step-by-step how to make the terbiye as well as how to add it to your soup so it doesn't curdle—a very important technique called tempering that could make or (literally) break your soup. This technique not only adds body to the soup but also introduces a delightful balance of creaminess and acidity, taking any chicken soup up a notch.

How Do You Make Turkish Chicken Soup?

Meliz's TikTok shows her making a deliciously simple chicken soup recipe that incorporates chicken thighs, carrots, potatoes, celery, rice and onions. After cooking the soup, right at the end, she pulls out the magic ingredient—the terbiye.

To make it, she whisks together one tablespoon of plain unsweetened yogurt, one tablespoon of flour, one egg yolk and the juice of one lemon. To avoid curdling, slowly temper the terbiye by adding a ladleful of the hot chicken broth to the yogurt mixture while whisking constantly. Repeat. Then, slowly pour it back into the soup (you don't want this to scramble, so don't rush this part) and simmer for a few more minutes until the soup is thick and creamy. And just like that, you've officially given your chicken soup a serious glow-up.
