The Ramos gin fizz is a refreshing and visually stunning classic cocktail, with its bubbly lemon flavor and frothy foam that overflows from the glass. Our fall-flavored riff on this drink shifts the ingredients to focus on one of our favorite seasonal produce items: pears!

By marrying fresh pear juice with pear brandy, our Pear Fizz exhibits bold and rich pear flavors, while also maintaining the airy effervescence one would expect from a fizz cocktail.

Ingredients

  • 2 oz.

    pear brandy

  • 1/2 oz.

    pear juice

  • 1/2 oz.

    lemon juice

  • 3/4 oz.

    simple syrup

  • 1

    egg white

  • Soda water

Directions

  1. Combine all ingredients except the soda water in a cocktail shaker. Add ice and shake for 15-20 seconds.

  2. Strain out the ice, then shake the contents again for about 30 seconds.

  3. Pour the contents into a highball glass, and let the drink settle for 1 minute, until a layer of foam separates from the liquid. Slowly pour the soda water down the side of a straw into the glass, so that the foam slowly rises to the top. Pour until the glass is full and the foam has risen slightly above the rim of the glass.
