Warm Quinoa and Chickpea Salad with Caper and Yoghurt Dressing

Ingredients

  • 1 cup quinoa, cooked in 2 cups of water
  • 1 tsp fresh chilli
  • A handful of roasted pepitas
  • ½ cup of basil, chopped
  • 1 cup of green beans, blanched
  • 1 ½ cups capsicum, diced
  • Dressing
  • 1 tbs capers, finely chopped
  • 4 tbs full-fat yoghurt
  • 2 tbs extra-virgin olive oil
  • 1 tsp garlic, crushed
  • 1 tsp agave nectar or honey
  1. Method

  1. Combine all ingredients together in a large bowl.
  2. Make dressing: combine yoghurt, olive oil and honey in a jar. Add garlic and capers; stir dressing through quinoa mix.
