Passionfruit & Coconut Frozen Yogurt Bark Simply Tastes Like Summer
I am obsessed with passionfruit! I first had it when I was in Australia, they serve it over this delicious thick sweet yogurt and it’s pure heaven. I find it’s not as common or easy to get in the States, but Melissa’s Produce came through with a large order for me, and I was thrilled. I’ve been experimenting with things to make with it—which brings us to this bright and creamy Passionfruit and Coconut Frozen Yogurt Bark recipe.
I wanted to stick with the same combination of sweetness from the fruit and tang from the yogurt. This pairing also showcases the passionfruit flavor. The neutral background of the yogurt lets the passionfruit shine and I also adore the texture of the seeds and pulp, so I never strain it.

I will usually inhale the fruit and yogurt mixture on its own, so I thought, how do I get this flavor to last longer? Freezing it was the clear answer. This way, I could add a few extra bits such as coconut, pistachios and even some chia seeds to give it a healthful boost. Sometimes the passionfruit can be a little bitter, so I added the honey and vanilla to make sure the sweetness was spot on. You can definitely make this your own and play with the additions such as using almonds instead of pistachios, maybe some smashed banana or mango into the yogurt, or even some white chocolate. Whatever you can come up with, it’s hard to go wrong with these flavors of summer.
How To Make Passionfruit & Coconut Frozen Yogurt Bark
1. Mix yogurt, vanilla, honey and coconut flakes together in a mixing bowl.
2. Prep a sheet pan with a piece of parchment paper.
3. Spread the yogurt mixture onto the tray, making some valleys for the passionfruit to fill in.
4. Next, spoon over the passionfruit and lightly swirl with a spoon.
5. Top with pistachios, more coconut flakes, pistachios and chia seeds.
6. Finish by adding a drizzle of honey over the top.
7. Freeze for at least four hours, or overnight. Break apart and enjoy. I like to thaw it out for 10-15 minutes before eating.

Ingredients
2 cups plain Greek yogurt (full-fat for better taste)
1 tsp vanilla
2 tbsp honey (plus more for topping)
3 tbsp coconut flakes (plus more for topping)
3/4 cups passionfruit
2 tbsp crushed pistachios
1 tsp chia seeds
Honey to drizzle
