3 tbs vegetable oil
4 spring onions
3 cloves garlic
2cm thumb ginger, julienned
1/2 cup frozen carrots
4 cups cooked day old white rice
Salt, to taste
1 tsp sesame oil
1/2 cup frozen peas
2 tbs soy sauce
You could add:

Char sui pork
Heat oil in a large wok (or in my case a large nonstick fry pan).
Add spring onion, garlic and ginger.
Cook 1-2mins until aromatic.
Add carrots, toss through fragrant oil.
This is when you can add any of your additions: chicken, bacon, prawn, pork etc.
Add rice and using a wooden spoon break up any clumps and combine well with ginger and garlic mix.
Cook for 2-5mins until rice is warmed through and well coated.
Push rice to one side of pan / wok. Whisk together eggs with salt and sesame oil.
Add a splash of vegetable oil into pan and pour in eggs, stirring constantly until they are just cooked.
Fold through rice. Add peas and season with soy sauce. Serve hot.
