Is Chickpea Water The New Superfood?

Vegans listen up: there’s a new vegan whipped ‘cream’ getting around and it’s made from – you guessed it – chickpea water.

And we’re not talking about any special kind of chickpea water either. This is the regular, run of the mill chickpea water that comes as a by-product of canned chickpeas. Turns out, it can be whipped up into a cream like substance.

This new food is known as aquafaba, and it’s giving vegans a chance to tuck into meringue-like desserts.

Italivi Reboreda from NY vegetarian restaurant Nix has introduced aquafaba to the menu in the form of an extravagant pineapple dessert. By adding sugar and vinegar into the mix, the chickpea water is totally transformed. He told New York Magazine, “It's one of the best things I've learned about in a long time.”

As you can imagine, the vegan community is pretty stoked with this discovery. There is now an entire website dedicated to aquafaba, along with various blog and Instagram posts. Aquafaba can be used to create vegan macarons, meringues, cakes, ice cream and more.

Will we be skipping the dairy aisle anytime soon? No. Would we give aquafaba a try? Probably.
