Creamy Prawns with Rice (Diary Free)
Olive oil, for cooking
1 brown onion, diced
4 garlic cloves, crushed
1 small chilli, finely diced
¼ cup parsley, chopped
Salt and pepper, to taste
1x 400g can coconut milk
250ml vegetable stock
200g raw banana prawns, deveined
In a deep pot, heat a splash of olive oil over medium-high heat.
Add brown onion, garlic, chilli and parsley into the pot and cook for 3-5 mintues, until onion becomes translucent.
Add salt and pepper (a generous amount). Add coconut milk and vegetable stock and mix through. Taste, and season accordingly. Cook for 15 minutes until the mixture begins to slightly thicken.
Once thickened, add the prawns into the pot and cook for 5 minutes, or until completely cooked through.
Serve on a bed of rice.
