Frozen Yoghurt Lollies Are The Ultimate Summer Treat For Kids

Whether the kids are involved every step of the way or you fancy making this deliciously creamy frozen yoghurt pops for yourself, cool down this summer with our latest Cooking With Kids recipe.

Chef and cookbook author, Bettina Campolucci Bordi treats us to a healthy ice cream alternative that uses fresh fruit and lets the little ones get creative with their own favourite combination. “Try lots of different fruits or juices, these lovely lollies are easy to make, quick, and inexpensive,” she explains. “There is no need to spend money on expensive trendy moulds, either. I like to use old yoghurt pots – they work a charm!”

Have fun decorating together and give them the all-important task of popping the lollies out from pots. Bordi added: “It’s also an opportunity to teach your kids how to be kinder to the environment and discover new ways of reusing old things. Last but not least, patience – good things are worth waiting for.”

Serves: 4 | Prep time: 10 mins | Cook time: 4 hours of freezing time

Ingredients:

250g strawberries or other fruit of choice

100ml alternative yogurt

1 tsp maple syrup

Method:

1. Whizz up the fruit (be sure to reserve some for decoration), yoghurt and maple syrup in a blender or food processor.

2. Taste and add a little more syrup if needed. Divide the mixture between four ice lolly moulds (or old yogurt pots) and top it off with whole berries, then pop a stick into each one.

3. Put the lollies in the freezer for at least four hours or until solid.
