Easy Summertime Gazpacho

2 810g cans Ardmona Chopped Tomatoes, undrained
1/2 cup reduced-salt chicken stock or vegetable stock
2 cloves garlic, peeled and crushed
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon coarse salt
1/4 teaspoon pepper
1 cup peeled, seeded and finely chopped cucumber
1 medium green capsicum, finely chopped (1 cup)
1 medium red onion, finely chopped (1/2 cup)
Method
Method
1. In blender, place Ardmona Chopped Tomatoes, stock, garlic, lemon juice, olive oil, salt and pepper. Cover and blend on high speed 30 to 60 seconds or until pureed
2. Pour into medium bowl. Stir in cucumber, capsicum and onion.
3. Cover and refrigerate at least 1 hour.
