Eggs in Tomato Sauce

Ingredients

1/4 cup olive oil
3-4 long red chillies stemmed, seeded, and finely chopped
1 small brown onion, chopped
5 cloves garlic, crushed then sliced
1 teaspoon ground cumin
1 tablespoon paprika
1 810g can Ardmona Whole Peeled Tomatoes, undrained
Salt to taste
6 eggs
1/2 cup feta cheese, crumbled
1 tablespoon chopped flat-leaf parsley
Warm pitas, for serving

Method

1. Heat oil in a medium size frying pan over med-high heat. Add chilies & onions - cook until soft & golden brown.
2. Add garlic, cumin & paprika - cook 2 mins.
3. Empty Ardmona Whole Peeled Tomatoes & their liquid in a bowl and crush with your hands. Add to the pan with 1/2 cup water - simmer, stirring occasionally, until thickened slightly (15 mins). Season.
4. Crack eggs evenly distributed across the sauces surface.
5. Cover frying pan and cook until yolks are just set (5 mins).
6. Sprinkle with feta & parsley and serve with pitas.
