Chicken and Couscous Soup

Ingredients

1 tablespoon oil
500g sliced chicken tenderloins
1 sliced leek
1 grated carrot
1 grated zucchini
1 thinly sliced celery stick
2 cloves crushed garlic
2 tablespoons sweet chilli sauce
375g crushed tomatoes
1 and 1/2 litres chicken stock
1/3 cup San Remo Couscous
2 tablespoons chopped parsley

Method

1. Heat 1 tablespoon oil in large non-stick saucepan. Cook 500g sliced chicken tenderloins in batches. Remove.
2. Cook 1 sliced leek, 1 grated carrot, 1 grated zucchini, 1 thinly sliced celery stick and 2 cloves crushed garlic. 3. Add chicken to pan with 2 tablespoons sweet chilli sauce, 375g crushed tomatoes and 1 1/2 litres chicken stock. Bring to boil. Simmer 15 minutes.
4. Add 1/3 cup San Remo Couscous and 2 tablespoons chopped parsley. Simmer 5 minutes or until couscous is tender.
