Spicy Beef Salad with Soba Noodles and Soy Dressing

Ingredients

The marinade

600g beef eye fillet (sliced into thin strips)
1 tsp Lee Kum Kee freshly minced garlic
1 tbsp Lee Kum Kee ginger
2 tbsp Lee Kum Kee soy sauce
1 tsp sambal olek
1 tbsp Lee Kum Kee pure sesame oil
2 tbsp extra virgin olive oil


The vegetables

2 cups soba noodles (cooked)
1 cup shredded iceberg lettuce
1 diced tomato
½ cucumber sliced
1 cup bean sprouts
1 cup coarsely chopped coriander
½ cup grated carrot


The dressing

4 tbsp fresh lime juice
4 tbsp Lee Kum Kee soy sauce
4 tbsp extra virgin olive oil (EVOO)
1 tbsp sesame seed oil
1 tsp sambal olek
2 tbsp grated ginger
4 tbsp chopped peanuts
½ cup coriander sprigs

Method

1. Place the thin beef strips into a bowl and add all the marinade ingredients. Combine well, cover and refrigerate until required.
2. Place the noodles and all the vegetable ingredients into a large mixing bowl and using a gentle hand, combine well. Prepare the dressing by combining all the ingredients well.
3. Using a carving fork, place it into the noodle mix and turn gently until you have formed a neat round stack around the tongs. Place onto a serving plate.
4. Heat a heavy based griddle pan, add a little EVOO and quickly sear the beef strips. Place around the noodle mix and cover the noodle mix well with the dressing mix. Finish with some extra chopped peanuts and coriander leaves.
