Sweet corn & potato chowder

Ingredients

20g butter
1 chopped onion
2 tablespoons plain flour
2 cups milk
1 cup stock
2 peeled and chopped potatoes
kernels from 3 cobs of fresh corn
1/4 cup chives
dollop of sour cream
chopped fried bacon

Method

1. Heat butter in a frying pan. Add chopped onion and cook till soft. Stir in plain flour, cook 1 min. Gradually add milk and stock. Stir over low heat until combined.
2. Add potatoes and kernels. Bring to boil and simmer for 8-10 min. Stir through chives before serving with sour cream. Garnish with fried bacon.
