Spiced steak, caramelised onion & rocket rolls

Ingredients

2 tbsp olive oil
3 red onions, thinly sliced
1/4 cup sugar
1/4 white wine vinegar
1/3 cup red wine
6 minute steaks
2 tsp smoked paprika
2 tsp sumac
Olive oil cooking spray
6 Italian bread rolls
1 bunch rocket, rinsed
Tomato chilli relish

Method

1. Heat oil in a large pan over a medium heat.
2. Add onions and cook, stirring, for 10 minutes until onions are soft but not brown.
3. Sprinkle sugar over, add vinegar and wine. Stir until combined and simmer on a medium-low heat for a further 15 minutes until liquid has been absorbed. Set aside until cool.
4. Sprinkle both sides of the steaks evenly with paprika and sumac and set aside.
5. Spray a chargrill or frying pan with olive oil and put over a medium-high heat.
6. Cut bread rolls in half and cook flat side on grill until lightly golden.
7. Spray steaks with olive oil spray and cook for 2-3 minutes on each side, depending on thickness. Set aside.
8. Put some rocket leaves on the base of each roll, top with relish, steak and caramelised onions. Season with salt and pepper and replace tops of bread rolls.
9. Serve immediately.
