Greek salad with char-grilled salmon

Ingredients

1/2 quantity Easy Bolognaise Sauce
11/2 cups frozen mixed vegetables
Potato topping
2kg potatoes or sweet potatoes, peeled, chopped
25g butter, chopped
1/2 cup grated light tasty cheese
Salt and pepper, to taste

Method

1. Reheat bolognaise sauce in a saucepan with frozen mixed vegetables. Spoon mixture into an ovenproof casserole dish (8-cup capacity).

2. To make potato topping, boil, steam or microwaves potatoes until tender. Drain well. Transfer two-thirds of the potatoes to a large bowl. Refrigerate remaining potatoes to make Salmon Patties.

3. Add butter and cheese to potato in bowl, mash until smooth. Season with salt and pepper.

4. Spoon potato topping over mince mixture. Cook, uncovered, in a hot oven (200C) for about 30 minutes or until hot.

Notes

Mashed potatoes can be refrigerated for up to 2 days. Reheat in a microwave for about 2 minutes before using.
