Berry French Toast

Ingredients

50g egg
2 eggwhites (from 50g eggs) or 50g egg
60ml (1/4 cup) skim milk
Pinch ground cinnamon
1/2 tsp extra-light olive oil or canola oil
4 slices Burgen Fruit & Muesli bread,crusts removed, quartered
80g strawberries, hulled, cut into small wedges
60g blueberries
No-fat yoghurt or diet vanilla
yoghurt to serve (optional)
2 tsp maple syrup or sugar-free
maple syrup to serve

Method

1. In a small bowl, whisk together the egg, eggwhites or egg, milk and ground cinnamon.

2. Brush a large, non-stick frying pan with the oil and heat on medium.

3. Dip 2 bread pieces into the egg mixture and shake off the excess.

4. Place in the pan and cook for 2-3 minutes each side, or until golden brown. Repeat with remaining bread slices

5. Divide Toast among serving plates. Top with the strawberries and blueberries. Top with a dollop of yoghurt. Drizzle over the maple syrup. Serve.
