Grilled King Prawn Salad with Lemon, Chilli and Dill

Ingredients

8 large king prawns, peeled & de-veined
1 pounded dried birds eye chilli
1 fresh long red chilli, finely chopped
1 tablespoon of chopped dill
2 lemons
8 tbsp extra virgin olive oil
14 extra fine green beans cooked
1 small finely chopped clove of garlic
salt & freshly ground black pepper

Method

1. For marinade, combine a good pinch of dried chilli with the fresh chilli, dill, garlic & 4 tbsp of olive oil and a squeeze of lemon. Rub over the prawns and season with salt and pepper.

2. In a hot fry pan fry the prawns for approximately two minutes each side, until cooked.

3. Serve with 1/2 a lemon, a drizzle of olive oil, cooked green bean & a rocket salad.
