Roast Spiced Pork Loin with Caramelised Fig, Rind On

Ingredients

1.5 -2.0 pork loin roast, boneless & rind on rolled
4 fresh figs, halved
2 tblsp oil
1 tblsp flaked salt
1/2 tsp nutmeg
6 - 8 small fresh figs
4 cinnamon sticks
1/2 brown sugar
1/4 cup sweet sherry

Method

1. (Pre-heat oven 220c ) Lay pork loin skin side down on a chopping board and make a pocket in the centre of the loin 2-3cm.

2. Gently push the dried figs into the pocket to fill the centre.

3. Rub the oil onto the surface of the roast and sprinkle over the combined salt and nutmeg.

4. Place the roast into the baking dish and bake in the pre-heated oven 220c for 20 minutes, then reduce heat to 180c for the remainder of the cooking time 25 minutes per 500g.

5. Whilst the roast is cooking place the remaining figs, cinnamon sticks, brown sugar and sherry into a small saucepan and simmer gently for 10 -12 minutes.

6. Allow roast to rest 10 minutes prior to serving with glazed figs and your favourite baked vegetables.

Notes

Dried figs may replace fresh when not in season.
