Breakfast Egg and Bacon Pies

Ingredients

12 slices white bread, crusts removed
1/2 cup grated tasty cheese
4 green spring onions, finely sliced
1 red capsicum, finely chopped
6 eggs, lightly beaten
1/2 cup cream
Salt and pepper, to taste
3 bacon rashers, finely chopped

Method

1. Grease a 12-hole muffin pan (1/3 cup-capacity).
2. Press bread into prepared pan holes.
3. Combine cheese, spring onions, capsicum, eggs and cream in a medium jug. Season with salt and pepper.
4. Divide mixture evenly among bread cases.
5. Cook in a moderate oven (180C) for about 20 minutes or until set.
6. Meanwhile, cook bacon in a non-stick frying pan until crisp. Drain on absorbent paper. Serve pies topped with bacon.
