Homemade Breakfast Beans

Greek salad with char-grilled salmon

Ingredients

1 red onion, sliced
2 x 400 g tins cannellini beans, drained
250 g cherry tomatoes, halved
1 x 400 g tins chopped peeled tomatoes
1 teaspoon smoked paprika
2 tbsp chopped parsley
1-teaspoon organic maple syrup

Method

1. Saute the onion in a little olive oil until soft and caramelised.
2. Add the beans and tomatoes, chopped peeled tomatoes, paprika, parsley and maple syrup.
3. Simmer over a low heat for 5 minutes and serve. Add a little water to the beans if needed.
