Chorizo Breakfast Tortillas

Greek salad with char-grilled salmon

Ingredients

8 mini (2 x 160g packets) soft tortillas burrito
5 chorizo sausages, halved lengthways
Cooking oil spray
8 eggs
8 tablespoons water
Salt and pepper, to taste
1 1/2 cups grated tasty cheese
1 avocado, sliced

Method

1. Heat tortillas according to packet instructions.
2. Heat a large frying pan over a medium heat. Add sausages. Cook, turning occasionally, for about 5 minutes or until crispy and hot. Remove and keep warm.
3. Heat a 20cm non-stick frying pan. Spray with cooking oil.
4. Combine 1 egg with 1 tablespoon of the water in a small jug. Season with salt and pepper. Whisk well. Pour into pan, swirl to coat base evenly. Cook for about 30 seconds or until egg is almost set. 5. Turn over and cook for a further 30 seconds or until browned. Remove and cover to keep warm. Repeat process with remaining eggs and water to make 10 omelettes.
6. To assemble, top tortillas with omelettes, sausages, cheese and avocado. Roll up to enclose filling.
