Margherita Pizza

Greek salad with char-grilled salmon

Ingredients

Coarse semolina, for dusting
1 quantity pizza dough (170 grams)
Basic pizza sauce
1 tablespoon chopped flat-leaf (Italian) parsley
75 g grated mozzarella cheese
180 g cherry tomatoes, thinly sliced
6 basil leaves
40 g buffalo mozzarella cheese, torn into 6 pieces
3 tablespoons grated parmesan cheese

Method

1. Place a pizza stone or heavy-based oven tray in the oven and preheat to 250 degrees celsius.
2. Lightly dust your workbench with semolina, then roll out the dough into a 30 cm round, place on a pizza tray and prick all over with a fork.
3. Spread the pizza sauce over the base and scatter with the parsley, grated mozzarella and tomatoes. 4. Place the tray on the preheated stone or tray and bake for 5-6 minutes, or until the base is golden and crisp.
5. Remove from the oven, top with basil leaves, buffalo mozzarella pieces, sprinkle with grated parmesan and serve.
