Grilled Chicken Salad with Potatoes, Sun-dried Tomatoes, Mustard and Basil

2 chicken breasts
4 chat potatoes, parboiled
For the marinade
1 tbsp of French mustard
2 tbsp of sun-dried tomatoes
A splash of extra virgin olive oil
1 large sprig of basil
For the salad
2 vine tomatoes chopped
1 small cucumber chopped
4 spring onions finely sliced
1/2 a red onion finely sliced
1 bunch of rocket
Method
Method
1. Blend all the above and marinade the chicken for up to 24 hours.
2. Dress the salad with a splash of olive oil, a splash of aged sweet vinegar then season with salt and freshly ground black pepper.
3. Season the marinated chicken breast and potatoes with a little olive oil, salt, and freshly ground black pepper.
4. Char-grill them on a hot BBQ until cooked, then remove and allow to rest.
5. Arrange the salad on a plate with the chicken and potatoes on top. Drizzle over the sun-dried tomato marinade and serve.
