Vegetable Fritters

Ingredients

1 medium potato, coarsely grated
1 medium zucchini, coarsely grated
1 medium carrot, coarsely grated
125g can corn kernels, rinsed, drained
1/4 cup plain flour
2 tablespoons chopped fresh parsley
1 egg, lightly beaten
salt and pepper, to taste
2 tablespoons vegetable oil
Fresh herbs, to garnish


Lemon Mayonnaise

1 cup whole-egg mayonnaise
1 tablespoon lemon juice
1 tablespoon finely chopped fresh chives

Method

To make lemon mayonnaise, combine all ingredients in a small bowl. Cover, refrigerate until serving.
Squeeze excess moisture from potato, zucchini and carrot. Drain on absorbent paper.
Combine all vegetables, flour, parsley, egg and salt and pepper in a large bowl. Mix well.
1. Heat oil in a large frying pan or barbecue hot plate. Drop 1/4 cups of mixture in pan and flatten using a spatula to form a 9cm round. Cook fritters on both sides until golden brown .
2. Drain on paper towel.
3. Serve warm fritters with lemon mayonnaise. Garnish with fresh herbs.
