Eden Mussels with Lemon Grass, Chilli, Parsley, Coriander and Lime

Ingredients

1 kg of Eden mussels cleaned and the beards removed
1 stick of lemon grass bashed with the back of a knife
4 cloves of garlic bashed
1 chilli - sliced
1/2 red onion finely sliced
4 spring onions finely sliced
1/2 small bunch of corainder roughly chopped
1/2 small bunch of parsley roughly chopped
A splash of olive oil

Method

1. To a hot pan add the olive oil, mussels, red onion, lemon grass, lime juice, chilli and garlic. Put the lid on and cook for 3 to 5 minutes till the mussels open and are cooked. Add the finely chopped spring onions, coriander and the parsely.

2. Serve the mussels in two large deep bowls drizzled with a little olive oil.

3. Serve with lots of warm, fresh crusty bread.
