Grilled Regal Salmon Fresh Cuts escalopes

Ingredients

250g Regal Salmon Fresh Cuts Escalopes
olive oil, for brushing
1/4 cup barbecue sauce
sea salt and freshly ground black pepper
2 lemons or limes, cut into quarters
Avocado and red capsicum salsa:
1 avocado, diced
1 red capsicum, diced finely
1/2 red onion, diced finely
1/2 cup fresh herbs such as parsley, mint, basil, or dill, finely chopped
2 tablespoons extra virgin olive oil
1 lemon, juice of

Method

1. Preheat the oven grill to high. Place the salmon escalopes on a greased oven rack (spray with olive oil), inside a roasting dish or on a baking tray. Brush over olive oil and barbecue sauce, and sprinkle sea salt over top. Arrange lemons and limes on the grill tray.

2. Grill them in the oven for 10 minutes until flesh is opaque and firm. Alternatively, cook the salmon pieces on a greased barbecue grill plate for 5 minutes, skin side down. Brush with extra marinade before carefully turning over and cook for another 5 minutes. Leave to rest for 1-2 minutes before serving.

3. To make the salsa, mix all the ingredients together in a bowl. Serve with fresh avocado and red capsicum salsa and the grilled lemon or lime wedges.
