Bacon onion tart

Ingredients

2 sheets puff pastry
40g butter
3 bacon rashers, diced
1 large onion, sliced
1/4 cup self-raising flour
3 eggs, lightly beaten
300g carton of sour cream

Method

1. Preheat the oven to 200 C. Lightly grease a shallow 23cm pie dish. Lay sheets of pastry together and roll to about 30cm square. Line base and sides of dish with pastry.

2. Trim excess pastry and prick the base with a fork. Blind bake for 10 min. Remove the paper and beans/rice and bake for a further 10 min. Reduce oven temperature to 180 C.

3. Melt butter in a frying pan and add the bacon and onions. Cook for 3-5 min or until the bacon is crispy. Remove from the heat. Add the flour and mix in the eggs and sour cream. Season to taste with salt and pepper.

4. Pour into pie dish and sprinkle with dried chopped chives, if you like. Bake for 35 min or until set and golden brown. Serve with salad.
