Spicy Prawn & Lime Soup

Ingredients

5 cups prepared chicken stock
3 Kaffir lime leaves, finely shredded
2 cloves garlic, crushed
2 tablespoons grated fresh ginger
2 small red chillies, deseeded and finely sliced
1kg medium green prawns, shelled, deveined, with tails intact
165ml can reduced-fat coconut milk
1 bunch Chinese broccoli, chopped
1/4 cup each fish sauce and lime juice

Method

1. Place the chicken stock, Kaffir lime leaves, garlic, ginger and chillies in a large saucepan and bring to the boil. Simmer for 5 min.

2. Add the prawns, coconut milk and Chinese broccoli. Cook for 3-5 min, or until the prawns have just turned pink and vegetables have softened.

3. Stir through the fish sauce and lime juice. Ladle into bowls and garnish with shredded Kaffir lime leaves and chopped basil.
