Easy ratatouille with beans

Ingredients

164g sachet McCormickSlow Cookers Soup Minestrone recipe base
1 large red onion
1 large eggplant, cut into 3cm pieces
2 zucchini, thickly sliced
2 red capsicums, chopped
2 x 400g can chopped or diced tomatoes
2 cups chopped green beans
2 tablespoons chopped fresh basil leaves

Method

1. Wash the beans from the sachet and discard any impurities. Place into a pan and cover with water, bring to the boil. Simmer for 5 min, remove from heat and allow to stand for 1 hr. Drain beans and add to the slow cooker insert.

2. Add onion, eggplant, zucchini and capsicum. Combine tomatoes, recipe- base seasonings and 1 cup water. Pour over vegetables.

3. Cover slow cooker and cook on high 2 hr (low 4 hr). Add green beans and cook for a further 30 min on high. Add basil and season to taste. Serve with piping hot garlic or herb bread.
