Mum's Minestrone

Ingredients

4 rashers bacon, chopped
420g can condensed tomato soup
1 carrot, peeled and finely chopped
1/2 barbecued chicken, shredded
4 large basil leaves, shredded
1/4 cup frozen peas or beans
1 cup cooked pasta shapes or rice

Method

1. In a large pan, heat a little olive oil and fry the bacon until crisp. Add the soup along with 1 1/2 cans of water. Bring to simmering point and add the chopped carrot. Cover and reduce heat, simmer for 5 min or until the carrot is tender.

2. Add the chicken, basil and peas and cook for a further 2 min. Add the cooked pasta or rice and simmer until heated through. Ladle into four bowls and garnish with parmesan cheese. Serve with crusty bread or garlic bread.
