Pork Meatballs in Tomato Spinach Sauce

Ingredients

420g can condensed tomato soup
1 1/2 cups chicken stock
1/2 tsp dried thyme
2 tomatoes, chopped
1 cup frozen peas
120g baby spinach leaves
Shaved parmesan, to garnish
Crusty bread, to serve


MEATBALLS

750g pork mince
1 onion, grated
1 clove garlic, crushed
1/2 cup long grain rice
1/4 cup finely chopped fresh parsley
Salt and pepper, to taste

Method

1. To make pork meatballs, combine all ingredients in a large bowl. Roll tablespoons of mixture into balls.


2. Place soup, stock, thyme and tomatoes in a large, deep frying pan. Bring to boil. Add meatballs. Bring to boil. Simmer, covered, stirring occasionally, for about 30 minutes, or until meatballs are cooked through and rice is tender.


3. Add peas and spinach. Cook, uncovered, for about 2 minutes, or until peas are tender.


4. Garnish with parmesan. Serve with crusty bread.
