Fast Ed Miniature Fruit Breads

20g of butter or margarine
250g of honey
2 eggs
2 apples and mash 2 bananas
120g of sultanas
grated rind from an orange
200g self-raising flour
½ teaspoon of ground cinnamon


1. Preheat oven to 180C.

2. Grease a 6 hole Texas muffin tin or similar.

3. Place 120g of butter or margarine into a medium mixing bowl add 250g of honey and beat until creamy add two eggs and beat for a minute longer.

4. Grate 2 apples and mash 2 bananas add to the butter mixture. Add 120g of sultana's finely grated rind from an orange. Add 200g of sifted self-raising flour and ½ teaspoon of ground cinnamon. Stir until just combined. Spoon mixture into prepared tin.

5. Bake for 20-25 minutes.
