Green Chicken Curry with Beans

Green chicken curry with beans

Ingredients

400ml coconut cream
1-2 tablespoons green curry paste (from larger supermarkets)
400ml coconut milk
500g chicken breast fillets, cut into 2cm cubes
150g green beans, trimmed and cut into short lengths
4 kaffir lime leaves
1 tbsp fish sauce
1 tbsp brown sugar

Method

1. Place the coconut cream in a wok and stir in the curry paste. Bring to the boil, then reduce the heat and simmer for 10 minutes, or until the oil separates from the coconut cream.

2. Add the coconut milk, chicken pieces, green beans and kaffir lime leaves. Bring back to the boil, then reduce the heat and simmer for 10 minutes, or until the chicken is cooked through.

3. Add the fish sauce and brown sugar, stirring until combined. Serve immediately with steamed jasmine rice and garnish with chopped fresh coriander leaves, if desired.
