Chicken Pasta with Curry Dressing

Ingredients

500g packet spiral pasta
2 teaspoons olive oil
1 large red capsicum, finely chopped
10 green spring onions, finely chopped
2 1/2 cups shredded chicken meat (about 3 large chicken breasts or 1 barbecued chicken)
2 avocadoes, chopped
100g packet crunchy noodles


Curry dressing

2 teaspoons Keens traditional curry powder
1 1/2 tablespoons caster sugar
1/4 cup white vinegar
1/2 cup olive oil
salt and pepper to taste

Method

1. Bring a large pan of water to boil, add pasta. Boil, uncovered, for about 12 minutes or until tender. Drain. Rinse pasta under cold water, drain well. Place oil on hands and rub through pasta to prevent it sticking.

2. To make curry dressing, combine all ingredients in a jug. Whisk well.

3. Combine pasta, capsicum, spring onions, chicken, avocado in a bowl. Just before serving, add dressing and crunchy noodles, toss to combine.

Notes

Salad can be made up to one day ahead, keep, covered in refrigerator. Add crunchy noodles just before serving.
