Smoked Salmon Mini-bagels

Ingredients

Mini salmon bagels
1 tablespoon olive oil
2 x 100g bags baby rocket leaves
1 bunch chives, finely chopped
salt and pepper to taste
2 avocados, halved, sliced crossways
2 teaspoons lemon juice
6 mini bagels
200g smoked salmon
Mustard vinaigriette
1 tablespoon wholegrain mustard
1 teaspoon caster sugar
2 tablespoons white wine vinegar
1/2 cup olive oil
1 tablespoon chopped fresh dill

Method

1. To make the mustard vinaigrette, whisk all ingredients together in a small bowl until combined.

2. Heat oil in a large pan. Add rocket, cook, stirring, until just wilted. Remove from heat, cool. Squeeze any excess liquid from rocket. Stir in chives and season with salt and pepper.

3. Gently toss avocados in lemon juice in a medium bowl.

4. Cut bagels in half. Top each bagel half with avocado, rocket mixture and smoked salmon. Drizzle with mustard vinaigrette and serve immediately.
