Berry Lamington Roll

Ingredients

500g lamington sponge roll
1/4 cup sweet sherry
300ml carton thickened cream
1 tablespoon caster sugar
125g punnet blueberries
250g punnet strawberries, quartered
desiccated coconut, to decorate

Method

1. Place sponge roll on one end of a large sheet of non-stick baking paper. Using a palette knife, slowly un-roll sponge, taking care not to let the sponge break. Brush sherry over sponge.

2. Combine cream and sugar in a bowl, beat with an electric mixer until soft peaks form.

3. Spread cream over sponge, then scatter combined blueberries and strawberries over top. Using paper as a guide, carefully re-roll sponge. Lift roll onto a serving plate and sprinkle with coconut.
