Breakfast Chipolata Rolls with Caramelised Onions

Ingredients

2 teaspoons American mustard
2 teaspoons honey
6 chipolata sausages
cooking oil spray
1/2 cup whole egg mayonnaise
1/4 cup sweet chilli sauce
6 bake-at-home bread rolls, toasted
Lettuce leaves, to serve


Caramalised Onions

2 tablespoons olive oil
4 large onions, thinly sliced
1/3 cup brown sugar
2 teaspoons balsamic vinegar

Method

1. To make caramelised onions, heat oil in a large frying pan. Add onions.
2. Cook, stirring, over a high heat until browned and soft. Add sugar and vinegar. Reduce heat. Cook, stirring, until sugar is dissolved and mixture is slightly thickened slightly. Cool.
3. Combine mustard, honey and sausages in a small bowl. Mix well.
4. Spray a heated non-stick frying pan with cooking oil. Add sausages, cook over a medium heat, turning occasionally, for about 10 minutes or until browned all over and cooked through.
5. Make a cut down the centre of each roll, being carefully not to cut the whole way through. Divide lettuce and sausages among rolls.
6. Serve rolls with caramelised onions.
