Peruvian Kingfish Cevice

Ingredients

Kingfish fillet ,clean and pin boned
Ginger
Celery
Garlic
Coriander
Limes
Spanish onions
Sweet potato
Star anis
Sugar syrup
Vodka

Method

1. Dice fillet 1x1 cm cubes
2. Puree ginger ,celery, garlic, chilli and coriander
6. 3. To order mix in a bowl squeezed lime juice add and ice cube the fish dice and puree with fresh chilli, thinly sliced Spanish onion (rinse in cold water)
4. Pick coriander
5. Turn sweet potato and poach in sugar syrup
6. Left over juices in the bowl mix with vodka and serve in a shot glass
