Super-strawberry choc hazelnut pavlova

Ingredients

4 punnets strawberries, hulled
1 cup caster sugar
¼ cup Grand Marnier orange liqueur
600ml cream
200g dark chocolate, finely chopped
2 Tbsp pure icing sugar
seeds of 1 vanilla bean
200g mascarpone
1 x 400g Woolworths Gold hand-finished Chocolate Hazelnut Pavlova
mint leaves, to garnish

Method

1 Combine half the strawberries with the caster sugar and orange liqueur in a small saucepan and set over a moderate heat. Simmer for 5 minutes, until the berries begin to turn brown, then strain into a bowl. Discard the cooked berries. Put the syrup and remaining berries in the saucepan and heat gently, until the berries are just softened.

2 Pour half the cream into a small saucepan and bring to a boil, then mix in the chocolate and whisk until smooth to
make a chocolate sauce. Whisk the remaining cream with the icing sugar and vanilla seeds to soft peaks, then mix in the mascarpone. Spread over the Woolworths Gold hand-finished Chocolate Hazelnut Pavlova and drizzle with chocolate sauce. Top with strawberry mixture, then garnish with mint leaves.
