Ingredients

• 1g Olive Oil Spray
• 300g Raw, Lean Chicken Breast, halved horizontally
• 2 Wholemeal Bread Roll (140g), cut in half
• 1 Carrot (61g), grated
• 1 1/2 tablespoons Sweet Chilli Sauce (30g)
• 1 Lebanese Cucumber (135g), cut into ribbons
• 20g Baby Spinach

Method

1. Spray a large non-stick frying pan with oil and heat over medium heat. Cook chicken for 3 minutes each side or until golden brown and cooked through.
2. Place base half of each roll onto plates. Top with carrot, chicken, chilli sauce, cucumber and spinach leaves. Put other half of roll on top and serve.

Mish Tips
•For those who aren’t into chilli, replace the sweet chilli sauce with low-fat mayonnaise. Remember to adjust the calories.
•Use a vegetable peeler to cut cucumber into ribbons.
