A lighter and fresher twist on a regular burger, cranberry and brie go hand-in-hand with a low-fat turkey patty in these delicious bagel burgers.
500g turkey mince
1 small brown onion, grated
1/2 cup white breadcrumbs, made from day-old bread
3 tsp Dijon mustard
1 bunch chives, finely chopped
1 Tbsp olive oil
150g brie, sliced
4 bagels, split, toasted
4 large green oak lettuce leaves or lettuce leaves of your choice
1 large avocado, flesh sliced
4 radishes, thinly sliced
1/3 cup cranberry sauce
1. Preheat oven to 180∞C. Line an oven tray with baking paper.
2. Combine turkey mince, onion, breadcrumbs, mustard and chives in a medium bowl. Divide mixture into 4 even-sized patties and put on a plate.
3. Heat oil in a large non-stick frying pan over a medium heat. Add patties and cook for 3-4 minutes on each side or until golden. Transfer to prepared tray. Top patties with brie slices and bake for 10 minutes or until cheese is melted and patties are cooked through.
4. Divide bagel bases between serving plates. Top with lettuce, turkey patties, avocado slices and radish. Spoon over a little cranberry sauce and finish with bagel tops to serve.
Turkey mince is one of the leanest types of mince available, and can be found in either the poultry or mince section of the supermarket.
