Chris Bath's orange and almond cake

News presenter Chris Bath discovered the recipe for this beautiful orange and almond cake while she was away in Bali. Now she has teamed up with the Red Cross and shared it in aid of the Red Cross Big Cake Bake, which helps those in need by getting ordinary Australians to hold fundraising events across the country.


3 oranges
9 eggs
560g almond meal
375g white sugar
1.5tsp baking powder

Orange cardamom sauce
400ml freshly squeezed orange juice
80g glucose
50g white sugar
4g cardamom seeds


Boil oranges whole for an hour, deseed if needed and blend (skin on) until pureed.

Whisk eggs and sugar until thick and pale (or use electric mixer), then add almond meal and baking powder and stir gently with a spatula to combine.

Add orange puree, then pour the mixture into a round baking tin and bake for 40 minutes at 150c.

For the sauce, put all ingredients in saucepan. Bring to the boil then simmer until thick. Serve warm with cake and good yoghurt or cream.
