Smoked Salmon & Cucumber Ribbon Sandwiches

Delicate and delicious, these mini smoked salmon sandwiches are sure to impress royal baby shower guests!


2 x 250g tubs spreadable cream cheese
1½ tblsps horseradish cream
¹⁄³ cup finely chopped fresh chives
Salt and pepper, to taste
1 telegraph cucumber
16 slices white sandwich bread
8 slices light rye or wholemeal sandwich bread
300g sliced smoked salmon
Watercress, to garnish


1 Combine cheese, cream and chives in a bowl. Season with salt and pepper. Mix well.

2 Cut both ends off cucumber and discard. Thinly slice cucumber into rounds.

3 To assemble, spread one-third of the cheese mixture over one side of half the white bread. Top with cucumber, slightly overlapping the slices. Spread another one-third of the cheese mixture over one side of rye bread. Place bread on top of cucumber, cheese facing up.
Top with salmon, slightly overlapping the slices.

4 Spread remaining cheese mixture over one side of remaining white bread. Place bread on top of salmon, cheese facing down.

5 Using a large serrated or electric knife, cut all the crusts off sandwiches. Cut each sandwich into three fingers.

6 Place on a serving plate. Garnish with watercress.
