Fettuccine with chicken, basil, garlic and chilli

Ingredients

2 tbsp olive oil
375g fettuccine
400g chicken breast fillets
1 tbsp Gourmet Garden Garlic
2 tsp Gourmet Garden Chilli
2 tsp Gourmet Garden Basil
250g halved cherry tomatoes
1/2 cup halved pitted kalamata olives
1 tbsp Gourmet Garden Basil
50g baby rocket
1/2 cup finely grated parmesan cheese

Method

Cook fettuccine in a large saucepan of boiling water until tender. Drain.

Meanwhile, heat olive oil in a large deep- frying pan. Add thinly sliced chicken breast fillets. Cook for 5 minutes or until browned and almost cooked through.

Add Gourmet Garden Garlic, Gourmet Garden Chilli and 2 tsp Gourmet Garden Basil. Stir to combine. Add cherry tomatoes and kalamata olives. Cook for 5 minutes or until tomatoes start to soften.

Bake in a preheated 220C oven for 45 minutes or until top is golden and a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
