Ingredients

Spiced Yogurt:
250g sheep-milk yogurt
1/2 tablespoon of sumac( middle eastern spice)
1/2 teaspoon of ground cumin
Juice of roughly half a lemon
1 tablespoon of nice olive oil
Pinch of salt

Macadamia honey:
2 tablespoons of macadamia honey
4 tablespoons of best red wine vinegar
Handful of crushed roasted macadamia nuts

Cooked heirloom carrots
Baby beetroots
Green beans
Toasted pumpkins seeds ( pepitas)
Toasted sunflower seeds
Cooked Freekeh
Cooked quinoa
Mixed sprouts like alfalfa, sprouted lentils, broccoli sprouts etc

Method

Combine all ingredients together for the spiced yogurt, taste and adjust as necessary.

Repeat with the macadamia honey dressing.

Make a nice mix of all the sprouts together, you could add a few mixed leaves if you like.

Place the grains, and vegetables in a bowl, dressing lightly.

To plate:

Add the spiced yogurt dressing to the base of a bowl plate.

Layer with the grains, and vegetables, then gently arrange sprouts on top and around.

Nice to have a little height then carefully drizzle the honey and red-wine vinegar around the salad, if you can sprinkle with bee pollen for added texture and flavour.

This is a seriously healthy, but most important tasty, nutritious salad for all including the kids!!
